Quick Meal Ideas for Summer
Quick and easy dinner ideas. Summer is my favorite time of year. It is a great time for family dinners, but with full schedules, quick and easy meals are often the way I go. Quick and easy dinners can help get everyone fed at the same time so you can still get your chores done after dinner. Here are some of my go-to recipes that everyone loves and they’re super easy to prepare. The recipes in this post are ones I’ve made many times, so they are truly quick and don’t take much time at all. These quick meals for dinner have saved me so much time, and hopefully will do the same for you.
Chicken nuggets/chicken fingers in the air fryer
This is a quick and easy meal that fills up our family. Cook a vegetable on the side and bam you have a quick meal for dinner.
Pizza with chicken wings
This is easy because the pizza and wings can cook at the same time.
Grilled Chicken and rice
The rice can be started as you’re cutting up the chicken. I usually put the chicken on the stove and stir fry it.
Hot dogs in the oven
You can never go wrong with hot dogs. EVER.
Baked Potatoes
Poke some holes in larger potatoes and stick them in the microwave. This is one of my favorite nights
Canned Chili on Frito chips sprinkled with cheese
Just heat up the chili before pouring it over the chips. This meal always reminds me of those high school Friday nights I would spend at football games.
Omelets
I put ham, cheese and some veggies in my omelets. This can be served as a main course or put in a tortilla/ bread if there isn’t enough eggs to go around.
Cheese Tortillas
Put a tortilla on a plate, sprinkle some cheese on it then heat it in the microwave for about 30 seconds (just enough to melt the cheese) then roll up the tortilla. This is one of the easiest for us to make on a late night or busy night.
Scalloped Potatoes with Ground Beef
Brown ground beef in a cast iron pan then add the boxed scalloped potatoes. Add a veggie or even a can of Rotel for extra flavor. Then stick it in the oven and cook until crispy.
Mac & Cheese with Chicken
Cook box Mac & Cheese then add some cooked chicken in it, then mix. Sometimes we add bacon bits which gives it a crunchy texture.
To sum up, these dinners are quick, easy and delicious. The family will love them. The best part is, these meals can be made in 20-40 minutes or less!

A lot of these are our dinner go-tos for busy nights. I don’t know why we don’t have baked potatoes more – there are so many ways to prepare them!
I am all about quick meals. I will keep these in mind for sure. They all sound incredible.
Quick meals can be really useful on weekdays especially. I love mac and cheese although I need to make it from scratch as I can’t eat premade stuff.
